You’ve probably heard of EZ Water if you’ve landed here via search. It has many other names, such as hexagonal water, cellular water, or structured water. All these terms mean the same thing and refer to the groundbreaking research results of Professor Gerald Pollack from the University of Washington.

In this post, I explain in detail what EZ water is all about, and the science behind it. But most importantly, we have a look at why it’s more than a scientific abstraction from the American ivory tower – because hexagonal water has profound effects on the way we understand health. It explains many basic biological mechanisms around and simplifies them.

The bottom line is that we can use this theoretical knowledge practically to optimize our health. And that’s what it’s all about – theory and practice. Knowledge without application is worth little.

What is Hexagonal Water?

Hexagonal water, also called EZ water, has a specific atomic structure. This water is formed close to hydrophilic surfaces and forms an exclusion zone (EZ). This EZ has a honeycomb structure, hence the ‘hexagonal’ in the name.

And that pretty much hits the nail on the head, because EZ water is the Fourth Phase of water, where it forms a zone that excludes all other substances from it. Don’t worry if that doesn’t make sense yet. There are decades of science in these 2 sentences, so we are still unpacking the whole thing.

Structured Water: The Science behind it

Water doesn’t sound like much at first. And you might quickly think that modern science already knows everything about it. At least that’s what I thought! I was off track. Far off. Much remains enigmatic when it comes to the simple H₂O.

Therefore we first take a look at what the EZ theory describes. The great thing is that from a bird’s eye view, it is very simple1Here to Pollack’s explanation of his theory: The Fourth Phase of Water: Implications for Energy, Life, and Health

Water has Four Phases, not Three!

Yep, what you learned in secondary school was wrong. Water exists in:

  1. Solid
  2. Fluid
  3. Gaseous
  4. Exclusion Zone

EZ is a phase of its own. It has similarities to the three others, yet is fundamentally different from them. Gerald Pollack describes it as a ‘liquid crystal‘ because it carries characteristics of both. The definition of a phase even fits, so no rules of physics are broken here.2Exclusion zone as intermediate between ice and water

But in order to understand why that makes sense, we need to look at the word ‘hexagonal‘ in hexagonal water!

Why is it called ‘Hexagonal‘?

It is called hexagonal water because of the special structure that the water assumes when it forms an exclusion zone.

Exclusion Zones form wherever there are hydrophilic, i.e. water-loving, surfaces. That is almost everywhere! Proteins, or cell membranes are common examples, in experiments they use a Teflon-like substance called Nafion.

When water comes into contact with hydrophilic surfaces, the charges of the water are re-sorted:

  1. An H₂O molecule releases a hydrogen (H+). Hydroxide (OH-) is formed.
  2. The exclusion zone consists of many OH-, which cluster together like honeycombs. Honeycombs have a hexagonal shape. Hence the HEXAGONAL.
  3. The shape is nothing new, ordinary ice has the same molecular structure. What is different is the lack of bridges between the layers – EZ has none and therefore is not like ice in consistency. It is gel-like.

What is formed in the process are many rows of molecular honeycombs that neatly stack on top of each other. In terms of quantity, there can easily be 10,000 layers on top of each other, with not unusual thicknesses of 200 micrometers.

What does the EZ (‘=Exclusion Zone’) in EZ-Wasser stand for?

Quelle: “Exclusion Zone” Formation in Mixtures of Ethanol and Water – Scientific Figure on ResearchGate.

If you’ve done the math carefully, you’ll notice that it doesn’t add up:

2xH₂O = OH

Correctly it looks like this:

  • 2xH₂O = OH & H3O+

During the process, a hydrogen from a donor H₂O couples to a surrounding recipient H₂O. What is then formed is called H3O+ or hydronium and is simply positively charged. The hydronium H3O’s swim around the exclusion zone. In the picture, the positive hydronium ions are called ‘bulk water‘.
That’s why the exclusion zone itself is strongly negatively charged, and the surrounding zone filled with H3O’s is strongly positively charged.3There are less frequently also positive exclusion zones of H3O+ , with surrounding OH- molecules swimming around. It depends on the material on which it forms.

Interestingly no electrostatic laws are broken by charge separation. Although the exclusion zones are negatively charged and the hydronium is positive, the overall charge remains neutral. Nothing is lost. Also, the process is completely reversible.

Nevertheless, energy is needed to structure these zone and for their maintenance. The energy comes from an overlooked place – the environment. More precisely in the form of daylight.4Water, Energy and Life: Fresh Views from the Water’s Edge

What are the biological Effects of EZ Water?

Now that we know what we’re talking about in the first place – the exclusion zones with their honeycomb water grid – I’d like to show you next why the entire topic is important. It’s a paradigm shift with profound theoretical & practical implications.

It is important to say that many of these are hypotheses so far, or have been confirmed only by a few laboratories. Nevertheless, it states a lot, if one can explain natural phenomena more completely with the EZ paradigm than with Einstein’s calculations.

Water becomes a Battery

What is a battery?

Something where current can flow. That happens everywhere where charges are separated from each other. In experiments, a current flow could be established, from the negative EZ to the positive hydronium zone. Not much, but some. Reminds me a bit of the potato batteries from physics class, doesn’t it?

Normal AA batteries, also form exclusion zones and thus draw light energy. They, therefore, supply electricity not only because of the chemical reactions in it, but also because of infrared light. Otherwise, one cannot logically explain how a small AA battery supplies 5,000 coulombs in its lifetime – the equivalent of 15(!) lightnings.51A for 1,400h.

Thus, every cell and every hydrophilic surface within your body, becomes a battery. A battery that can supply energy for body processes at quantum speed. The big question is – how much?

Daylight charges the battery (especially infrared light)

As mentioned earlier, the formation of the exclusion zone is not a ‘free lunch’ as economists like to say. It does requires energy – albeit from an unexpected source:

Namely, the red and infrared light that is present everywhere.6Effect of infrared radiation on interfacial water at hydrophilic surfaces

It’s actually almost everywhere, even where visible daylight can’t reach. Infrared light is why night vision cameras work in the dark and why you can see through a wall with them.
Evolution has come up with a way to use these ubiquitous wavelengths to generate energy. Pretty clever!

You can see it in the fact that exclusion zones grow larger when exposed to infrared, and also more broadly to UV light. Growing exclusion zones means nothing else than adding further layers of honeycombs to the EZ water grid.

The classical Theories of Pumps & Membranes don’t hold anymore

A possible giant point is that the EZ’s make some membrane transporters unnecessary. Substances can thus theoretically diffuse across the membrane passively via the exclusion zones.

This theory is nothing new and none other than the great physiologist Gilbert Ling questioned the sodium/potassium ATPase several decades ago. The Na+/K+-ATPase is the theory of a pump that frantically pumps sodium and potassium as electrolytes out of and into the cells – for electrical stimulus transmission.
However, Ling determined computationally that its energy needs could never be met with all that work and he developed several theories of how passive mechanisms could accomplish this. He didn’t know about Pollack’s EZ-Water at the time, but was decades ahead of his time.7See his terrific but extremely difficult to read book: Life at the Cell and below the Cell Level

Also many other diaphragm pump systems could be explained differently via EZ mechanism of osmosis & diffusion.

Osmosis & Diffusion can be explained

Quelle: Why Hydrogels Don’t Dribble Water – Scientific Figure on ResearchGate.

You would think we would have understood osmosis. Even Einstein struggled with the phenomenon and developed the model that is commonly used today.
But the problem is that it is not universally applicable and there are many exceptions. This should not be the case with a complete theory. Newton’s ‘F =m x a’ applies to all forces, not just gravity on a Sunday after 9am.

Pollack, on the other hand, has explained osmosis & diffusion as one and the same phenomenon of exclusion zones, making it universally applicable. Also, the explanation has become simpler: EZ water is the battery, daylight is the energy supplier.8The Mechanisms of Osmosis: A new Paradigm

Elegantly, many other physical effects can be explained with it, at least in theory – like Brownian motions, or water vapor. Even the heart could be helped by EZ-water at the capillary walls.9On the Driver of Blood Circulation Beyond the Heart

What are the Effects on Health caused by Hexagonal Water?

Now, after all the theoretical science, we come to the central question – how can we apply this paradigm to optimize our health?

Basically it’s easy because the formula is: mitochondrial cell water + sunlight. But other things also play into this and favor the formation of hexagonal water, as well as the charging of the battery, as we will see.

Water produced in the Mitochondria is at the Centre

Mitochondrial water is cellular water. You may wonder why it is special & different. Let’s take a look!

Cytochrom-C-Oxidase produces a special Water

First, cell water it is formed at one single place in cell biology – the 4th complex of the respiratory chain: cytochrome C oxidase (CCO).
This is the last step before the 5th complex, where ADP ⇾ ATP is derived. This is done with the help of a chemoelectric gradient. Simply put, the respiratory chain does nothing but throw protons out of the mitochondria. This positive charge is then used to push ADP through the nanomotor that is Complex V. Boom, you have ATP again. Pretty elegant!

CCO is so important because this is where the oxidative part comes into play. In other words, oxygen is consumed. Oxygen is used to form water.

Cellular Water is deuterium-depleted

Second, this cell water is special because it is low in deuterium. And that is good.

Deuterium is heavy hydrogen. A standard hydrogen is only a lone proton. Deuterium in the body is in increased doses a giant problem, because it damages complex V.10Evidence for a Partially Stalled γ Rotor in F1-ATPase from Hydrogen–Deuterium Exchange Experiments and Molecular Dynamics Simulations
Imagine the following picture: Complex 5 is a tennis player and a machine shoots tennis balls to him. Deuterium atoms are not like a tennis ball, but a bocce ball. What happens? At best only the tennis racket is broken, at worst our tennis player.

That is why the body’s biochemistry is adapted to filter out deuterium. Certain enzymes, such as NADPH oxidase, only allow deuterium-poor substrate to pass. Some scientists believe that the reason biochemical energy production is so complex is just to filter out deuterium. There is no other way to explain the endless shuffling of electrons around in the citrate cycle.11Biological effects of deuteronation: ATP synthase as an example

We require regular Daylight to function

Cytochrome C oxidase is located in the mitochondrial matrix, the cell membrane of each mitochondrion. CCO pumps water outward into the intercellular space between the matrix and the membrane.
As a reminder, mitochondria have two membranes, the matrix and the true membrane.

Cellular Water functions as a Battery

This creates a battery in this space. First of all, each H₂O water molecule is electrically charged in itself. These are so-called dipoles: positively charged at the hydrogen arms, negatively charged at the oxygen. This is also the reason why water can dissolve almost anything in itself.
In addition, all membranes e.g. like the matrix and also dissolved particles in the interstitial space are hydrophilic. What happens at hydrophilic membranes?

Right! Exclusion Zones form and hexagonal Water is produced.

  • Light provides the energy to form and maintain EZ
  • Wavelengths, such as red light, enlarge EZ water
  • Other wave spectra, such as EMF waves from WLAN, cellular and 5G, shrink them12Low frequency weak electric fields can induce structural changes in water
  • Red light also manages to activate CCO. It increases the uptake of oxygen and thus the output of cell water as well as energy in the form of ATP.

Cellular Water is closely tied to Mitochondrial Health

Therefore, it is no wonder that cellular water is closely associated with mitochondrial health. This EZ structure thus makes each mitochondrion a small battery. And we all know what happens when mitochondria get sick – the whole plethora of modern diseases. I estimate 90% of all modern diseases are mitochondrial in origin. Quantum health starts right here at this fundamental level. A rough overview from me on the subject can be found here.

Let’s have a look at Cancer as a Mitochondrial Disease

Cancer is a well-established one. Let’s take it as an example.

In cancer, the controlled, cellular self-destruction can no longer take place. In technical language, this is called autophagy. What happens instead is chaotic self-destruction called necrosis. Cells ‘burst’ and create inflammation, which acts as the cleaning crew.

So whose job is its initiation? Who fails here?

I stumbled across the answer in Nick Lane’s ‘Power, Sex & Suicide*’ and it surprised me – it’s our buddy cytochrome c oxidase. When autophagy is initiated, it migrates from the matrix membrane across the intercellular space into the actual cell plasma. CCO in the cell plasma then activates the cell’s death bringers – the so-called caspase enzymes.

Faulty autophagy is a failure of mitochondria. And that is a huge contributor to some diseases. Many others are characterized by lack of energy, which is also the task of mitochondria.

Movement, Temperature & Ketogenic Diets play into it

Many other lifestyle habits, away from sun exposure & red light therapy, manage to structure EZ water.

For example:

  1. Movement (Through a process called piezoelectricity)
  2. Cold Therapy (Expandy Exclusion Zones)
  3. Earthing (Gathering negative Charge)
  4. High-Fat and ketogenic Diets (help to deplete deuterium)13Healthy Fats and Exclusion-Zone Size

Exercise creates electricity in the collagen fibers, which is nothing more than negative charge that can traverse the body. Cold therapy, on the other hand, expands EZ water. Earthing, or grounding, brings your body into contact with the ground. This is how you can absorb negative charge.

Ketogenic and high-fat diets are also beneficial because their biochemical makeup makes them low in deuterium. Carbohydrates on the other hand are not, they are usually richer than the recommended baseline of ~140ppm of deuterium.

The Big Question: how much energy is produced by biophysical effects vs. the chemical energy of the ATPase?

I have no answer to that. Nor does anyone else. Probably the role of oxidative phosphorylation is smaller than assumed so far. In our current, purely biochemical system it is responsible for 100% of all energy. Many clever minds like the Nobel Laureate Albert Szent-Györgi (has discovered among other things vitamin C) criticized this model for a long time.

Especially against the background of quantum mechanics, many things cannot be explained – e.g. how do 9 billion reactions per cell per second coordinate with each other?

And with that, I leave you with a big question mark!
But hopefully the topic of EZ water has become a little clearer. For further knowledge, I can highly recommend Pollack’s book ‘Water*’. There he explains all his experiments as well as the implications of the theory on 400 pages in detail, with many great illustrations.

Frequently Asked Questions About Structured Water

What is Hexagonal Water?

Hexagonal water refers to the fourth aggregate state of water, which Gerald Pollack has shown experimentally. Here, water molecules arrange themselves in a very special way in the presence of hydrophilic surfaces. A honeycomb-like network is formed, which can be flexibly built up and broken down.

How do I recognize hexagonal water?

Hexagonal water forms a honeycomb structure. Here, the H2O of the water splits into hydronium (H3O+) and hydroxide (OH-). The hydroxide forms and forms a negative hexagonal structure similar to the formation of ice, but without the molecular cross-bridges.

How long is hexagonal water stable?

The hexagonal structure needs energy to maintain itself. This energy is supplied by daylight. Without this input, the EZ decays rapidly, within 30min, and shrinks. Therefore, structured water is structured for only a few hours.

Where can I buy hexagonal water?

Hexagonal water is not available for purchase. It forms naturally when sunlight hits water. Water from streams, for example, is structured. Therefore, you can easily make it yourself.

How does hexagonal water form?

Hexagonal water forms on hydrophilic surfaces. Energy for building up the honeycomb structure is provided by daylight – especially the red components of the light spectrum.

What is EZ Water?

EZ water is the same as hexagonal or structured water. The EZ stands for exclusion zone. All solid particles are expelled from this zone, hence the name. EZ water forms on hydrophilic surfaces.
